How does a quick, easy, healthy treat inspired by the flavors of an Almond Joy sound? These delicious Chocolate Coconut Almond Bites made with coconut flour are vegan, gluten free, paleo friendly and loaded with fiber. Not familiar with coconut flour?  Perhaps you should be!

Coconut flour is gluten free, low carb, high fiber, protein rich and rocks all the vitamins and health benefits that coconuts provide. Not only is the flavor and texture fabulous for baking – coconut flour can also be eaten raw. Be prepared though: coconut flour is nothing like your ordinary flour.  It’s super absorbent – you’ll be using almost shocking amounts of liquids when baking with it!

You can happily enjoy these Chocolate Coconut Almond Bites without an ounce of guilt.  Actually, you’ll find snacking on this fiber rich snack will satisfy your sweet tooth and fill your belly.

Chocolate Coconut Almond Bites

Ingredients

½ cup organic coconut flour

2 tablespoon desiccated coconut or unsweetened shredded coconut

2 tablespoon cocoa powder

3 tablespoon agave

2 tablespoon coconut oil (measured solid then melted)

3 – 4 tablespoon milk of choice (coconut, almond, soy, rice)

1 heaping tablespoon crushed almonds

1 heaping tablespoon dark chocolate or carob chips

Directions

Combine coconut flour, shredded coconut, cocoa powder, agave, coconut oil and milk in a food processor.  Process until combined.  If mixture seems dry, add an additional tablespoon of milk.

Measure out heaping tablespoons, roll into balls or patties onto wax paper. Press a pinch of crushed almonds on tops.  Melt chocolate and drizzle on top.  Finish by sprinkling remaining almonds over chocolate.

Cool & store in fridge. Enjoy!
