Coconut water is great for weight loss, digestion, and healthy skin. It’s also low in carbs, fat-free, and cholesterol-free.

It’s no wonder athletes swear by it after a workout because it’s super hydrating, reduces sodium, and has the potassium of four bananas.

Sure, you could just drink it straight up, but coconut water is finding its way into recipes for DIY beauty, beverages, and food.

Try out this delicious horchata recipe by yours truly for a new take on a classic Mexican favorite. It’s refreshing, but simultaneously creamy, sweet, and comforting, as we’re squeezing out the last drops of summer and cooling down into a cozy autumn.

Coconut Water Horchata


– 1 cup of uncooked white rice
– 3 1/2 cups of coconut water
– 1 can of coconut milk
– 1 1/2 cups water
– 1/4 cup beet sugar
– 1/2 Tbsp. ground cinnamon
– 1/2 Tbsp. vanilla extract


1. Blend the rice and 3 1/2 cups of coconut water just to break up the rice, about a minute. Cover and let it sit for 3 hours or overnight.
2. In a sieve or a fine colandar, drain the rice mixture into a pitcher and discard the rice grains.
3. Stir in the coconut milk, water, beet sugar, cinnamon and vanilla until dissolved
4. Place the pitcher in the fridge and chill.
5. Before serving, stir well. Pour over ice or even serve hot, alongside your favorite pastry.
