Try out this delicious horchata recipe by yours truly for a new take on a classic Mexican favorite. It’s refreshing, but simultaneously creamy, sweet, and comforting, as we’re squeezing out the last drops of summer and cooling down into a cozy autumn.

Coconut Water Horchata

Ingredients

– 1 cup of uncooked white rice
– 3 1/2 cups of coconut water
– 1 can of coconut milk
– 1 1/2 cups water
– 1/4 cup beet sugar
– 1/2 Tbsp. ground cinnamon
– 1/2 Tbsp. vanilla extract

Instructions

1. Blend the rice and 3 1/2 cups of coconut water just to break up the rice, about a minute. Cover and let it sit for 3 hours or overnight.
2. In a sieve or a fine colandar, drain the rice mixture into a pitcher and discard the rice grains.
3. Stir in the coconut milk, water, beet sugar, cinnamon and vanilla until dissolved
4. Place the pitcher in the fridge and chill.
5. Before serving, stir well. Pour over ice or even serve hot, alongside your favorite pastry.
