RECIPE: Quinoa Vegetable Soup

If you’re looking to spice up your holiday menu, this hearty quinoa vegetable soup will definitely be a hit among your guests this Thanksgiving.

Not only is this soup nutritious and filling, but it’s super easy to make. And with the health benefits of quinoa (a well-known superfood), I can guarantee that you will want to make this soup more than once.

According to mindbodygreen.com, quinoa:

  • is a complete protein with all 9 essential amino acids

  • is high in riboflavin (B2), an antioxidant that boosts your metabolism and energy levels

  • contains double the amount of fiber compared to other grains – it’s great for your digestion (especially during this holiday season)

Pair this soup with these delicious slow cooker mashed potatoes

Quinoa Vegetable Soup


Serves 4

  • 2/3 cup of dry quinoa
  • 1/2 cup of chopped onions (I used a mix of white onions, green onions, and leeks, but you can use whichever you have on hand)
  • 4 cups of water/vegetable stock (add a bouillon cube to water)
  • 2 cloves of garlic
  • 1 celery stalk, thinly sliced
  • 1 large carrot
  • 1/4 cup green beans, thinly sliced
  • 2 red potatoes and 2 russet potato diced
  • 1/2 cup of pinto beans, white beans (canned)
  • 2 handfuls of chopped spinach
  • 1 dried bay leaf
  • dry thyme
  • dry oregano
  • tumeric
  • salt and pepper to taste
  • *1 seeded jalapeño pepper (0ptional, but this takes the soup to a whole new level)
  • salt and pepper to taste
  • cilantro for garnish


  1. Sautée the green onions and cloves in a small amount of oil or water in a large pot.
  2. Add 4 cups of water to the pot on medium heat, then rinse and drain the quinoa. Add it to the pot and bring to a boil.
  3. Add the diced potatoes, pinto beans, green beans, carrots, celery and bay leaf, and leave it to simmer uncovered for about 5 minutes.
  4. After the 5 minutes passed add in the rest of your spices, spinach, seeded jalapeño, season with salt and pepper to taste. Let it simmer uncovered until your quinoa blooms and your potatoes are tender.
  5. Serve in your favorite bowl, garnish with fresh cilantro, and enjoy!
