The Vegan Alternative For Chocolate Blueberry Cakes

Just because you follow a vegan diet doesn’t mean you can’t enjoy some delicious sweet cakes as well.

Try your hand at making these Vegan Chocolate Blueberry Cakes. The pleasant aroma of blueberries floating around your home while they bake in the oven is just an added plus.

Blueberries have many benefits, such as improving your skin and aiding in weight loss. They are known to be high antioxidant foods that contain both vitamin C and vitamin K. That means that they help protect against heart disease and strengthen your bones.

Vegan Chocolate Blueberry Cakes

Servings: 3 mini cakes

  • 1/2 cup gluten-free oats
  • 1/2 cup dried mulberries
  • 1/2 cup pitted dates (soak for around 10 minutes)

Blueberry Layer:

  • 1/2 cup raw cashews (soaked overnight)
  • 1 cup frozen blueberries
  • 2 tsp water

Chocolate Layer:

  • 1/2 cup raw cashews (soaked overnight)
  • 2 frozen bananas
  • 1 tbsp cocoa powder
  • 1/2 tbsp maple syrup


  1. Take all of your crust ingredients and blend in a food processor or high-speed blender until you get a crumbly mixture. Then form them into your mini springform cake pans. Place them in the freezer for 30 minutes to an hour, or until firm.
  2. First, rinse your food processor and drain your soaked cashews. Next, add your cashews and blueberries to your food processor or high-speed blender and blend until creamy. Add a few splashes of water, if necessary. Then add your blueberry layer to your cake pan and freeze for 1-2 hours.
  3. Blend all of your chocolate-layer ingredients until creamy. Add your chocolate mixture to your cake pans and place them back into your freezer for another 30 minutes to an hour.
  4. Lastly, you can top the cakes with blueberries and chocolate shavings. Then enjoy!
