Makes 6-8 servings

Apple Topping

2 Apples (Any sour apple works best)

1 Tsp. Cinnamon

1 Tsp. Vanilla Extract

½ Cup. Water

½ Cup. Coconut Sugar (Brown Cane Sugar works too)

2 Cups. Raw Halved Pecans

2 Tbsp. Earth Balance Buttery Spread

Let’s Get Started!

  1. Preheat your oven to 425F. In a food processor or blender, ground your pecans finely, and add your buttery spread to moisten your ground pecan mixture.

  1. In a shallow baking pie dish, press your pecans into the dish to create a crust. Place in the oven for 8-10 minutes, until the edges are golden brown. Remove and let cool.

  1. Wash your apples, and cut them into thin slices. Toss them into a non-stick saucepan, followed by the remaining apple topping ingredients. Stir once, and place on stovetop over high heat. Cover for 3-4 minutes until your apple slices become tender.

  1. Pour your apple toppings directly onto your pecan crumble, and garnish with some raw pecans to finish. Serve, and enjoy!

This looks yummy! I will try this for sure. My boys always tend to leave apples in the fruit bowl so this is a good way to use them up. Thanks 🙂
