Treat yourself and your family to this yummy cinnamon apple crumble. The filling is so rich and tasty, your kids will never know that it’s actually a vegan recipe, meaning it’s used without animal by-products!
Makes 6-8 servings
2 Apples (Any sour apple works best)
1 Tsp. Cinnamon
1 Tsp. Vanilla Extract
½ Cup. Water
½ Cup. Coconut Sugar (Brown Cane Sugar works too)
2 Cups. Raw Halved Pecans
2 Tbsp. Earth Balance Buttery Spread
Let’s Get Started!
- Preheat your oven to 425F. In a food processor or blender, ground your pecans finely, and add your buttery spread to moisten your ground pecan mixture.
- In a shallow baking pie dish, press your pecans into the dish to create a crust. Place in the oven for 8-10 minutes, until the edges are golden brown. Remove and let cool.
- Wash your apples, and cut them into thin slices. Toss them into a non-stick saucepan, followed by the remaining apple topping ingredients. Stir once, and place on stovetop over high heat. Cover for 3-4 minutes until your apple slices become tender.
- Pour your apple toppings directly onto your pecan crumble, and garnish with some raw pecans to finish. Serve, and enjoy!
