Quick & Easy PB and Cocoa Macaroons
1 Cup of Unsweetened Shredded Coconut
1⁄4 Cup of Coconut Milk
5 Tbsps. Of Cocoa Powder
1⁄4 Cup of Sugar
1⁄2 Tbsp. of Pure Vanilla Extract
1 Tbsp. of Natural Creamy Peanut Butter
Lets Get Started
Makes 19 pieces
1. In a food processor, add in all of your dry ingredients and mix together for about 10 seconds.
2. Next, add your remaining ingredients, and mix until it is combined entirely. Your mixture should look wet, but not runny.
3. Using a mini cookie scooper or a teaspoon, place your mini macaroons onto a baking sheet, with parchment paper, and freeze for 20mins. Macaroons will be nicely chilled and firm.
Shauna’s Note: You can store your macaroons in a tightly sealed plastic container in the freezer for up to 2 months, and nibble away at it when you get that chocolaty craving. Enjoy!
