Happy Easter, dear friends!
I love to celebrate the Easter holidays with family and friends, and nothing brings us closer together than delicious food.
Though I’m a vegan, I have no trouble fitting into the egg-centric festivities. In fact, I find the holiday to be an opportunity to try new recipes, like this Vegan Raspberry Zinger Coconut Cake devised by Namely Marly.
This moist cake is whipped together with fresh raspberries, coconut milk, apple cider vinegar, and vanilla. I’m going to give this recipe a try for my friends and family. We’ll see if they notice that there’s no milk or eggs!
