Tacos are practically a dinner staple for me and my busy lifestyle. Unfortunately, flour and corn tortillas are not the best for eating as often as I do… So, I recently switched to lettuce wraps. Lettuce wraps are lower on the calories and help you in your weight loss journey. Also, fresh, crispy lettuce wraps are fun to eat (with your hands) with your favorite fillers. I like to take lettuce wraps to work for lunch, when I don’t have time to cook.

These Vegan Taco Lettuce Wraps are high in protein, yet lower-calorie tacos! The spicy tempeh and black bean taco meat are wrapped inside crispy lettuce leaves with creamy avocado. You can even swap out the tempeh for your favorite protein.
To keep your lettuce fresh for the whole week, rip the lettuce apart by hand. Next, wash the veggies by submerging the leaves in a large bowl of cold water. Dry your pieces of lettuce gently, yet thoroughly, with a paper towel. Store the lettuce in between moist paper towels in a plastic container.
